Goat Cheese and Arugula over Pasta

Ingredients:
5 ½ ounces goat cheese
2 cups arugula, stems included, coarsely chopped
1 cup tomatoes  finely sliced
¼ cup Extra Virgin Olive Oil
2 teaspoons garlic, minced
½ teaspoon ground black pepper
½ teaspoon salt
8 ounces of pasta

Method:
Prepare pasta al dente according to package directions. Crumble goat cheese into a large serving bowl. Add arugula, cherry tomatoes, olive oil, garlic, and salt and pepper. Drain pasta, and toss with goat cheese mixture
